About the Recipe
This mock meat recipe is made using Jackfruit, called Kathal in Hindi. I have made an Indian curry version of it. It turns out so delicious that even people who don't like Kathal, will start loving it.

Ingredients
Jackfruit/Kathal: 500 gm
Turmeric Powder: 1 tsp
Red Chilli Powder: 1½ tsp
Hing: ½ tsp
Water: As required
Mustard Oil: ¼ cup
Bay Leaf: 2 pc
Cloves: 3 pc
Dalchini: 1 inch
Jeera: 1 tsp
Star Anise/Chakra Phool: 1 pc
Green Cardamom: 2-3 pc
Javitri: 1 pc
Onion: 3 medium
Ginger: 1 inch
Garlic: 2 tsp
Green Chilli: 2 pc
Kashmiri Chilli Powder: 2 tsp
Coriander Powder: 1 tbsp
Tomato Puree: Of 2 tomatoes
Salt to taste
Cream, Coriander Leaves, Kasuri Methi (For Garnishing)
Soy Sauce (umami)
Preparation
Step 1
Take a cooker, add washed kathal, turmeric powder, red chilli powder, hing and water. Mix well and pressure cook for 1 whistle.
Step 2
Take a kadai, add mustard oil and the whole spices.
Step 3
Once they start splattering, add chopped onions and cook till translucent. Add ginger, garlic and green chilli. Saute.
Step 4
Add kashmiri chilli powder, coriander powder, red chilli powder, turmeric powder and water. Stir well and let it cook. Also add some of the kathal stock.
Step 5
Once oil rises, add tomato puree along with more of the kathal stock, some salt, mix well and let it cook properly. Add the steamed kathal, cover and cook.
Step 6
Top with cream, coriander leaves and kasuri methi.
